Happy Thanksgiving....
Sorry I don't really have time to write much I've been baking all day and still have more to go. We are leaving for upstate tomorrow morning. I hope everyone has a safe and happy holiday. Pictured here is, pumpkin bread, pumpkin pie, cranberry bread,special corn bread that's like a side dish in oven, and tortellini soup for tonight!!
There's about 50 home made mini meatballs in here!!

Angelo's turn.....
Well now it was Angelo's turn to get his braces on. If you remember, he has a palate expander on already, but never got his regular braces on. On Tuesday he did. I thought maybe they would remove his palate expander but unfortunately for him, he now has both. His mouth is so full of metal I don't think they would let him on a plane!! The colors of his rubber bands are the Italian flag on his top teeth, and the American flag on the bottom.

It's my birthday !!!!
So today is my birthday and I've been sick since last Saturday!! I usually never get sick and if I should get a cold, It's usually gone in about 2 days. Not this time ! I finally called the Dr. today but he's so booked he couldn't even fit me in, so I begged the nurse to have him call me and as she was saying "OK, but he's not going to give you anything over the phone" he must have seen my name that she wrote down and he said get the number of her pharmacy!! He's so good to me. So now I'm starting some antibiotics, and I'm hoping to be better real fast. Norma just ordered some Chinese food, so as the saying goes, "feed a cold, starve a fever"....

IT'S APPLE SEASON......
Well the fall brings apples, and with apples you get apple sauce, apple butter, apple pie and apple crisp! On Saturday after I fried a few sweet peppers, I decided to start using up the 4 bushels of apples I bought upstate. I make mason size jars of apples sauce and I also fill ziploc bags with the filling for apple pies, I cut up about 6 cups of apples, add 3/4 c. of sugar, 3 T of flour, 3/4 to 1 tsp. cinnamon, mix it up, then freeze it all raw. (If you flatten out the bags, you can stack a lot in the freezer). For a quick dessert all I need to do is make or buy pie crusts, put in the filling and bake as usual and fresh apple pie all year long!! I also use the same filling for apple crisp. It's fun and very inexpensive. I get a bushel of irregulars (they are for pies and sauce), for $4.00 a bushel. That goes a long way.
It really is so simple to make. No water, just some apple juice if you like, and lots of cinnamon! If you put the applesauce in the jars right away, and turn them upside down to cool, you don't need to boil the jars, they seal on their own.
